(Roast Beef and Veggie Wraps)
Beef and Heirloom Tomato Salad with Balsamic Syrup

Ingredients

  • 16 slices thin deli roast beef
  • 2 cups shredded broccoli slaw
  • 1/4 cup low fat Ranch dressing
  • 2 Tbsp. low fat ranch dressing
  • 1 container (8 oz.) low fat cream cheese
  • 4 large flour tortillas
Preparation:
  1. Combine broccoli slaw and 1/4 cup ranch dressing in a medium bowl.
  2. Combine 2 Tbsp. Ranch dressing and cream cheese in a small bowl.
  3. Place tortillas on flat surface. Spread cream cheese mixture over tortillas. Place 4 roast beef slices on top of cream cheese layer. Top roast beef with broccoli slaw mixture.
  4. Roll tortilla tightly to enclose filling. Cut crosswise into 1½ inch wide pieces.
  5. If making wraps ahead of time, tightly wrap them individually in plastic wrap and refrigerate until serving time.

Makes 4 servings.
